Machine Concept for Pulsed Electric Field Treatment of Leafy Products

Abstract: This master thesis, executed in collaboration with Opticept Technologies, has the purpose of developing a machine concept that enables the treatment of leafy products with Pulsed Electric Fields (PEF). PEF is an emerging technology within the food industry that works by changing the cell membrane structure of food products by exposing them to high-voltage electric fields. It can be used to improve the shelf-life, freshness, taste, and nutritional value of various food products. Opticept currently has PEF-machines for liquid foods but is looking to expand the applicability of the technology to leafy products. To achieve this goal, the project follows a product development process that is a combination of the British Design Council’s Double Diamond model and Ulrich and Eppinger’s model for product development. The main activities of this process include research, concept development, prototyping, and testing. The project resulted in a new concept that fulfills several of the set requirements and has potential for further development. The concept is demonstrated with a small-scale prototype that visualizes the compression and transportation of leafy products, which were found to be critical aspects of the new machine.
